Valdafoz

The 2019 Valdafoz was produced with grapes from a one-hectare plot on a north-facing slope planted with Mencía and 7% white Jerez. It fermented in an oak vat with indigenous yeasts and matured in barrique and foudre for nine to 10 months. This has been produced since 2007, and they now think they have the knowledge about the vineyard that they want. This wine has some herbal notes that I also found in the Corullón. This is harvested late because it's higher up and has a pure north-facing exposure. The wine showcases the 2019 tannins a little à la Barolo, fine and grainy, with full flavors and a dry and soil-driven finish. 734 bottles and nine magnums produced.
