The top white, the 2022 Los Peros Albillo was produced with Albillo Real from a plot that is close to 90 years of age on pink granite soils. It fermented in a 1,000-liter oak foudre, where the wine matured with the fine lees that were not stirred for 10 months. It has a spicy nose with some smoky hints, contained ripeness, 13% alcohol and a low pH of 3.33, denoting good freshness. It has a more Burgundian profile and is a little rounder but with the fine thread and austerity of the granite soils. It's clean, precise and well proportioned. 1,300 bottles were filled in August 2023.
